Cottage Cheese Craze

I got on a cottage cheese craze during the months before my wedding. So I did a little research on this super food. It’s a great snack that is low in fat and carbs, high in protein, and a great source of calcium and Vitamin D. The truth is that cottage cheese can prevent stomach disorders and even help with your bones as you get older, especially in women.

So now what? You just bought a container of cottage cheese when you were shopping. You get it home and are wondering how you can keep it fresh for longer. How many times have you opened the lid to find puddles of water at the surface? This may sound silly, but make sure the lid fits tight and place it in the refrigerator upside down. By doing this it will make sure the curds are evenly coated with the surrounding liquid. Ta Da!

Here's a recipe to try:
Cinnamon-Peach Cottage Cheese Pancakes

INGREDIENTS:
4 eggs
1 cup cottage cheese
1/2 cup milk
1 teaspoon vanilla extract
2 tablespoons butter, melted
1 peach, shredded
1 cup all-purpose flour
2 tablespoons white sugar
1 pinch salt
3/4 teaspoon baking soda
1 teaspoon ground cinnamon

DIRECTIONS:
Mix eggs, cottage cheese, milk, vanilla, butter, and peach in a large bowl. Combine flour, sugar, salt, baking soda, and cinnamon in a small bowl. Stir flour mixture into the cottage cheese mixture until just combined.
Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle, and cook until bubbles form and the edges are dry. Flip, and cook until browned on the other side. Repeat with remaining batter.
SERVINGS: 4 people

You can substitute the fruit as desired. I think blueberries would be delicious with this recipe.
