Cottage Cheese Craze

I got on a cottage cheese craze during the months before my wedding. So I did a little research on this super food. It’s a great snack that is low in fat and carbs, high in protein, and a great source of calcium and Vitamin D. The truth is that cottage cheese can prevent stomach disorders and even help with your bones as you get older, especially in women.

So now what? You just bought a container of cottage cheese when you were shopping. You get it home and are wondering how you can keep it fresh for longer. How many times have you opened the lid to find puddles of water at the surface? This may sound silly, but make sure the lid fits tight and place it in the refrigerator upside down. By doing this it will make sure the curds are evenly coated with the surrounding liquid. Ta Da!

Here's a recipe to try:
Cinnamon-Peach Cottage Cheese Pancakes

INGREDIENTS:
4 eggs
1 cup cottage cheese
1/2 cup milk
1 teaspoon vanilla extract
2 tablespoons butter, melted
1 peach, shredded
1 cup all-purpose flour
2 tablespoons white sugar
1 pinch salt
3/4 teaspoon baking soda
1 teaspoon ground cinnamon

DIRECTIONS:
Mix eggs, cottage cheese, milk, vanilla, butter, and peach in a large bowl. Combine flour, sugar, salt, baking soda, and cinnamon in a small bowl. Stir flour mixture into the cottage cheese mixture until just combined.
Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle, and cook until bubbles form and the edges are dry. Flip, and cook until browned on the other side. Repeat with remaining batter.
SERVINGS: 4 people

You can substitute the fruit as desired. I think blueberries would be delicious with this recipe.

FUN QUIZ! - ANSWER

I always thought it was best to store whole wheat flour in the freezer....that's what my mom did....and I followed closely behind. But, it's actually best to store it in the refrigerator. For those that store it in the freezer, make sure it is tightly sealed and wrapped, and it'll be fine.

Wheat flour will keep for only a few months if stored in a cabinet, due to the presence of the wheat germ.

Helpful Tips (Eggs)

Do not store eggs in the molded egg rack in your refrigerator door, as the temperature is too warm. Eggs will keep much better when stored in the main body of the refrigerator, in their purchased container.

Did you know you can freeze eggs?

To freeze whole eggs:
1. Remove eggs from their shell
2. Pierce yolks and gently mix in 1/8 teaspoon of salt for every 2 eggs (if using eggs for main dishes) or 1 teaspoon of sugar (if using eggs for baking or desserts)
3. Place in covered airtight containers or heavy duty freezer bags and freeze

They’ll stay good for a whole year!
